Regional involvement is in our DNA. A prime example is our collaboration with various partners. We set very high standards for the quality of the products we work with. We prefer to work with suppliers from Tilburg and the surrounding area and with fresh (seasonal) products from our own region. This results in surprising colors and flavors of products that are perfectly suited to our kitchen. The no-food-waste policy in the kitchen also aligns with this sustainable business practice.
Years of collaboration thus grow into a valuable partnership. We would like to introduce you to some of our partners:
Lekker’nei goes directly from the farm of Harrie Beekmans and Jan van Baast to our restaurant, always in less than two days. That is very special, unique even, because an average egg takes ten days. We can therefore say that the Brabant poultry farmers from Oirschot hold sustainability, transparency, and authenticity in high regard.
Van Bilsen knows better than anyone how to find small winegrowers in Italy, Germany, France, and Austria who produce excellent quality wine. Together with our sommelier, Van Bilsen puts together a perfect wine list for every menu. It is not without reason that Van Bilsen’s wine assortment has been rated the best in the Netherlands four times in a row.
Huize Geers creates beautiful chocolates based on a tradition dating back to 1937. Entirely handmade, with the best raw materials and the most surprising, daring, and delicate fillings. The chocolates from Huize Geers were even voted the best in the Netherlands! We are delighted to share this indulgence with our guests.
Boerderij De Walhoeve in Goirle has existed since 1974, and keeping beef bulls in a hyper-modern stable soon proved to be a unique concept. To this day, they only work with their own calves, which are slaughtered after a good life on the farm. The cattle are always slaughtered nearby, which reduces stress for the animals.
At Den Elshorst, they farm in a nature-inclusive way, which means that natural cycles are encouraged. The pasture pigs have a unique task in nature management: their goal is to remove weeds and improve soil quality by rooting to stimulate natural vegetation for the soil. This gives the pasture pigs the time and space to reach the right weight and produce beautifully matured pasture meat.
De Stoerderij is a farm with very sturdy water buffaloes. The family herd consists of approximately one hundred water buffaloes, and they roam outside all year round in various pastures in Son en Breugel, near Eindhoven. Buffalo milk is famous for traditional Italian buffalo mozzarella, which is also produced at De Stoerderij.
Ambachtshoeve is a dairy farm in the heart of Brabant. Here, the (pasture) milk is processed into dairy products directly from the cow. The products are produced in a natural and traditional way, all with great attention and passion to deliver a perfect final product. The dairy carries the ‘Echte Boerderijzuivel’ (Real Farm Dairy) quality mark, which means it is traditionally made on the farm with milk from their own cows. We use this milk for our specialty coffees.
